This unique cheese is made to be aged in Valliera from hard, semi-cooked cow's milk.
It has an intense yellow colour with marbling, medium-sized holes and a delicate flavour with hints of hay and herbs.

Born in response to the needs of those who remained isolated in the high mountains, but rapidly becoming noble at the end of 1200, Castelmagno is a unique cheese, with a crumbly texture and a beautiful pearly white colour. It has a scent and persistent taste reminiscent of the flowers and herbs of high-altitude pastures. Des Martin continues this tradition in his extremely rare version of “alpeggio" PDO.
