Narbona is a semi-cooked, compact and elastic cheese, straw-coloured, with little holes. It has a thin, mouldy, grey rind. It is matured for 120 days to obtain a perfect balance between the pleasant lactic taste and the slightly piquant tones, more persistent on the finish.

Born in response to the needs of those who remained isolated in the high mountains, but rapidly becoming noble at the end of 1200, Castelmagno is a unique cheese, with a crumbly texture and a beautiful pearly white colour. It has a scent and persistent taste reminiscent of the flowers and herbs of high-altitude pastures. Des Martin continues this tradition in his extremely rare version of “alpeggio" PDO.
