Croce is a raw-milk cheese with a fine, slightly mouldy rind. The paste is soft and elastic, straw-coloured with well-distributed holes. It is characterised by its sweetness and the intense flavour of milk which envelops the palate. Croce "Riserva", matured for 120 days, releases more complex aromas and scents than the 60-day version.

Born in response to the needs of those who remained isolated in the high mountains, but rapidly becoming noble at the end of 1200, Castelmagno is a unique cheese, with a crumbly texture and a beautiful pearly white colour. It has a scent and persistent taste reminiscent of the flowers and herbs of high-altitude pastures. Des Martin continues this tradition in his extremely rare version of “alpeggio" PDO.
