Alpeggio" PDO is produced exclusively with raw milk, milked and processed in land over 1000m above sea level, and only between May and October, all to guarantee a product of the highest quality and unmistakable taste.

Born in response to the needs of those who remained isolated in the high mountains, but rapidly becoming noble at the end of 1200, Castelmagno is a unique cheese, with a crumbly texture and a beautiful pearly white colour. It has a scent and persistent taste reminiscent of the flowers and herbs of high-altitude pastures. Des Martin continues this tradition in his extremely rare version of “alpeggio" PDO.
