Batuira is a raw milk cheese with a semi-hard, soft and elastic texture. It is straw-yellow in colour, with fine, well-distributed holes that are very delicate on the palate. The rind is thin, slightly mouldy and grey in colour. A cheese with a delicate taste of milk, herbaceous and with a slight hint of acidity on the finish

Born in response to the needs of those who remained isolated in the high mountains, but rapidly becoming noble at the end of 1200, Castelmagno is a unique cheese, with a crumbly texture and a beautiful pearly white colour. It has a scent and persistent taste reminiscent of the flowers and herbs of high-altitude pastures. Des Martin continues this tradition in his extremely rare version of “alpeggio" PDO.
