Baciaset is a raw milk cheese with a thin, brown, mouldy rind. The grain is thicker than in the previous cheeses and the taste is very pleasant, sweet and milky.

Born in response to the needs of those who remained isolated in the high mountains, but rapidly becoming noble at the end of 1200, Castelmagno is a unique cheese, with a crumbly texture and a beautiful pearly white colour. It has a scent and persistent taste reminiscent of the flowers and herbs of high-altitude pastures. Des Martin continues this tradition in his extremely rare version of “alpeggio" PDO.
