  • The firm uses a traditional smoking technique, which makes for slower processing, but ensures an excellent flavour. It only ever uses fresh salmon, delivered twice weekly. This means that the average time between catching the fish and packaging the finished product is about a week. All processing is done by hand, making Kenmare salmon a truly artisanal product, natural and free of preservatives.
