Pianogrillo organic extra virgin olive oil is made from a local olive variety known as "Tonda Iblea", a cultivar of the Monti Iblei area of south east Sicily. The extra virgin oil is obtained by cold pressing the olives with a temperature-controlled squeezing system (Alfa Laval and Pieralisi olive oil processing systems).

This organic farm has received numerous Italian and international accolades for its excellent extra virgin olive oil. The oil emanates a rich aroma of unripe tomato and freshly cut grass. It has a yellow-green color and a delicate, well-rounded flavour. It has a medium piquancy and an acidity level that often is below 0.1%.
