Colatura di Alici is essentially an Italian fish sauce, watery in consistency with a beautiful golden brown color.
This sauce is made by capturing anchovy juice during the curing process and most Italians make a mix of Colatura with extra virgin olive oil, diced garlic and chopped parsley to season their tasty pasta. There are no additives or preservatives added.
