Just like Alaska salmon, salmon roe is an excellent dietary source of protein and the beneficial omega-3 fats, EPA and DHA. Per 1-ounce serving, roe contains slightly higher levels of EPA, DHA and protein than fish. The orange-red color of the eggs comes from astaxanthin, an antioxidant carotenoid. Salmon Roe also provides A-B-C and D vitamins.
