Bluefin tuna (Thunnus thynnus) has a characteristic reddish color that along with its capacity to concentrate fat in the muscles, as happens with meats, comes together to make it a highly valued product in gastronomy.
Wild bluefin tuna is caught and fed a strict diet of blue fish, the same as it would have eaten in the wild, in order to maintain the percentage of fat that gives it its characteristic taste and properties.
