This is the white meat of the brown crab. The preparation of this product is particularly difficult and delicate. After its cooking, the meat is separated from the shell and manually cleaned of impurities; an arduous task which requires patience and care. It is then carefully packaged, incorporating its covering liquor based on water and salt, and the can is sealed for sterilization.
In being presented simply in a can with water and salt, it can be accompanied, for example, by avocado and mayonnaise, resulting in a fresh and light dish as a starter.
